Cinnamon Applesauce Bread with Whipped Honey Butter





Hello Friends!

While I'm typing this, I'm enjoying a warm slice of cinnamon applesauce bread... fresh out of the oven with a little whipped honey-butter melted right on top. Mmmmm!

When people first enter the wonderful world of gluten free living, it can feel a little deprived. To them I say: cinnamon applesauce bread. Bam! Gluten-free indulgence at its finest. Before I made the choice to avoid grains, I loved bread. Since making the choice to avoid grains, I love bread. I stand by my belief that its possible to have everything without giving up anything! I believe that food should nourish our bodies and our souls, and warm, gooey, fresh-baked sweet bread makes my soul happy. 


This bread turned out moist and flavorful and makes your whole house smell like warm cinnamon while it bakes. I'm not usually big on nuts and raisins baked in breads but in this case.. do it! The raisins are nice and plump and the nuts add a perfect little crunch. 


Cinnamon Applesauce Bread
1/3 cup coconut oil, melted
1/3 cup agave
1 cup unsweetened applesauce
2 large eggs
1 1/4 cup gluten-free all purpose baking flour (I used Bob's)
1 cup coconut flour
1 cup almond flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon fresh grated ginger (or 1 teaspoon dried ginger)
1/2 teaspoon allspice
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)

Whipped Honey Butter
1/2 cup butter
1/3 cup raw honey


Preheat oven to 350. In a small bowl, whisk together the oil, honey, applesauce, eggs, and ginger if you're using fresh grated. In a larger bowl, stir together the flours, baking powder, baking soda, salt, cinnamon, allspice, and ginger if you're using dried ginger. Combine the applesauce mixture with the flour mixture. Mix until just combined and add the raisins and walnuts. Pour batter into a well greased loaf pan (8-in. x 4-in. x 2-in). Bake for about 45 minutes (keep an eye on it, I think I left mine in a little too long). Meanwhile beat honey and butter until well blended. Remove  bread from oven and let cool slightly before you remove it from the pan. Slice up a warm piece and top with whipped honey-butter! D-lish!


I'm visiting with a friend and her new baby tomorrow. I'm going to save some bread to have with our coffee in the morning. What a combo!
